MARYSVILLE, CA (MPG) - So, what is a Bows and Bolognese fundraiser anyway? The bow part is not like a bow and arrow, but in this case rather like a musician’s bow, the tensioned stick which has hair, usually horse-tail hair, coated in rosin affixed to it. It is moved across the strings of a musical instrument to cause vibration, which the instrument emits as sound. Bows are mostly used with string instruments, such as the violin, viola, cello, and bass. And the Bolognese? That’s the delicious sauce associated with the city of Bologna. It’s a slowly cooked meat-based sauce, which includes a characteristic sofrito of onion, celery, and carrots, and different types of minced or finely chopped beef, often alongside small amounts of fatty pork. White wine, milk, and a small amount of tomato paste, or tomato sauce are added, and the dish is then gently simmered at length to produce a thick sauce.  If that doesn’t get your attention, no telling what will!
